Clay is the default material for the Golem spell as it is easy to work with both physically and magically.[1] Clay golems are rather strong, and have no particular vulnerabilities, making them effective warrior-servants, especially if clay is all that one has on hand.[2]
As a side note--note that clay golems have Disturbing Voice instead of Mute. It's unknown if they have much to say, or if they can only deliver verbal messages.
