Undead tend to be very rare in the Martial Arts genre largely because there isn't much a martial artist can do against the living dead.
The master as a member of the undead was explored in The Legend of the 7 Golden Vampires (1974)
Vampires as enemies is explored in Mr. Vampire (1985) and Vampire Raiders Vs Ninja Queen (1988) though both have comedy elements though the Jiang Shi has additional powers that make them less comical then they would otherwise be.
