Sex and attraction binaries are false . . . but also not what the rules assume. The Basic Set repeats the wording "those attracted to members of your sex." GURPS Power-Ups 6: Quirks uses the wording "a biological sex different from the one with which you identify," "attracted to your actual sex," and "the sex you resemble." Perhaps we should've written "those attracted to your gender presentation," "a biological sex different from the one you present as," and "the gender you present as," but we don't assume that only XX and XY exist, and we're careful not to confuse karyotype and phenotype.
I think that this treatment is good enough for gaming. That's mainly because each person involved retains their power. The player of a character is not forced to choose between 2, 3, 10, or for that matter infinite possibilities for their outward image, but can describe this however they wish, and pick perks, quirks, Appearance levels, and modifiers to Appearance to arrive at a wide range of presentations. And "Who do you find attractive?" works the same way: People can be as vague or specific as they wish, and can even change the details as they desire – perhaps via quirks, which are intended to be mutable over time (see Changing Existing Quirks, Power-Ups 6, pp. 6-7).
To be completely honest, I think that the only people who have a problem with this approach are those who want "hard-coded" attraction effects in the game that enable them to roleplay the stereotyped D&D bard who seduces everything, or to game out offensive "I'm so attractive that I made you gay/straight!" fantasies. As that is in bad taste – immature at best and rapey at worst – I have no issues with "I paid points to be good looking!" taking a back seat to "Presentation and orientation are deeply personal topics, so we're going to let people decide case by case. If you dislike that, play a character who isn't dependent on it to be fun for you." I see nothing good coming from codifying which traits go with which presentations and orientations.
This is a game that explicitly spells out, "Appearance is mostly a 'special effect' – you may choose any physical appearance you like," "Most players prefer to choose ST, height, weight, and sex without being penalized," "You are free to select any height and weight," "You are free to pick any age," and "Left-handedness is a feature worth 0 points," and also that weak false identities are free and you're welcome to have them. The details of who you attract and are attracted to are among the long list of special effects and free choices. People who want F.A.T.A.L. know where to find it.
